I love Trader Joe’s for many reasons. One of the many things that I love to buy there is a variety of sauces to keep on hand, especially for nights where I need something different for a quick dinner. This dinner was a big hit at my house and was really easy to prepare. All ingredients were purchased at Trader Joe’s and only took a few minutes of my time, the best kind of dinners in my opinion!
2-3 large chicken breasts
1 jar of Trader Joe’s Thai Red Curry Sauce
1 can of lite coconut milk
Fresh snow peas
Salt & pepper to taste
In your crockpot, place chicken, thai sauce and coconut milk, salt and pepper. Cook on low for 6 hours or high for 4. 20 minutes prior to dinner time, remove chicken and shred using the 2 fork method. Next, add fresh snow peas to the sauce, place chicken back in crock pot and stir well. Let this sit for about 10-20 minutes while you are preparing rice noodles. Serve chicken over noodles and enjoy!
