What’s For Dinner? Taco Pizza & Shrimp Fajitas with Cauliflower Cilantro Lime Rice

My kids are OBSESSED with tacos and fajitas, so these make it into our menu weekly. Typically we have to abide by the “Taco Tuesday” rule that they also love, although really, no matter what day of the week it is,  who doesn’t love tacos and fajitas?!? I personally like to mix it up and make a healthier alternative for myself. My kids however loved this Taco Pizza and it was really easy to prepare. The shrimp fajitas were also great, I added some diced mango, guacamole, a low carb fajita and made this amazing cauliflower cilantro lime rice. Yum!!

Taco Pizza

1 lb ground beef (or chicken or turkey) 

taco seasoning (either 1 packet or make your own, I do and there are a ton of healthy recipes out there) 

1/2 block of cream cheese

1/2 container of sour cream (small) 

Shredded lettuce

Shredded cheese

diced tomatoes 

1 package of crescent rolls 

 

*First, roll out crescent rolls on a cookie sheet, press down any holes or perforated lines. Bake at 375 for 10 minutes, let cool. As that cooks, prepare your meat as you would for regular tacos (brown and add seasoning).  While the crust is cooling, mix some taco seasoning with the cream cheese and sour cream. Mix well and then spread on cooled crust. Add taco meat and then layer with lettuce, diced tomatoes, and lastly shredded cheese.*

Cauliflower Cilantro Lime Rice

  • 1 small head cauliflower, cut into florets
  • 1 tablespoon oil
  • 1 clove of garlic, minced (optional)
  • 1 lime
  • ¼ cup cilantro, chopped
  • ½ teaspoon salt

Rice the cauliflower by grating it on the larger holes on a grated or in a food processor. Heat the oil in a large pan or pot over medium-high heat; add garlic and stir for less than 1 minute then add the cauliflower and cook, stirring occasionally, until the cauliflower rice is tender and slightly golden brown, about 6-9 minutes.
