What’s For Dinner? Super Salad

As the weather gets colder I tend to turn to comfort foods more for dinner. While warm meals are great, sometimes you need something quick and healthy.  Make this super salad. So good & filling, not to mention filled with healthy fats & great nutrients.

Lettuce of Choice

I large tomato, sliced

Roasted peppers: I made my own, just using some olive oil and a combination of red, orange and yellow peppers.

1 hard boiled egg

a few slices of red onion

1 teaspoon of chia seeds, sprinkled over the salad.

Make your own balsamic & olive oil dressing and enjoy!!

*Feel free to add some grilled shrimp or chicken for added protein*
