What’s For Dinner? Summer Veggie Orzo

This week has been so hot and humid!  When the weather is like this, I hate the thought of cooking. I am always in the mood for something light and easy that doesn’t require me to turn on the oven. This was simple to make and filling. You could add grilled shrimp or chicken as well.





1 yellow squash, sliced

1 zucchini, sliced

1/4 yellow sweet onion, diced

fresh spinach

1 pint of cherry tomatoes

Orzo (I used a full bag, adjust to your family size)

Olive oil

Salt & Pepper

1 teaspoon minced garlic

bag of fresh spinach

1 cup of chicken broth


In a saute pan, add olive oil and minced garlic until hot. Next add all veggies and saute (about 10 minutes). Then add orzo and chicken broth. Reduce heat and simmer until orzo is cooked and liquid is absorbed (about 10-15 mins). Add salt and pepper to taste and enjoy!
