What’s For Dinner? Spinach Salad with Maple Dijon Dressing

I love eating a big salad for dinner, but I need to make sure to be creative with my salads so that I don’t get bored. This spinach salad is so good, it is the perfect weeknight dinner and is really filling. It was easy to prepare and the homemade dressing was delicious!! I made it up because I needed something different & it made the salad! Don’t skip it!! My drink in the picture is really refreshing and a great detox water. I add lemon, a few fresh basil leaves and 2-3 sliced strawberries to my ice water.

Ingredients: 

Salad: 

a few handfuls of fresh spinach

one hard boiled egg, sliced

a few mushrooms, sliced

2 pieces of turkey bacon, cooked and cut into small pieces

a few slices of red onion

a handful of cherry tomatoes

salt & pepper to taste

Dressing: 

2 tablespoons of white balsamic vinegar (I used Trader Joe’s brand)

1 teaspoon of whole grain mustard (I used Inglehoffer Stone Ground Mustard)

1-2 teaspoons of organic 100% pure maple syrup

Whisk ingredients together, warm in the microwave for 10 seconds, add to salad.
