What’s For Dinner? Slow Cooker Chicken Tortilla Soup

This Pinterest inspired soup is a perfect fall dinner, especially now that they weather is getting a little chillier! I made this soup on Monday night for dinner. My kids had homemade quesadillas to go with their soup and they really enjoyed this meal. We are still eating the leftovers this week for lunches! This took me all of five minutes to throw together in the morning and by dinner time it was ready to go for my family.

I topped mine with diced avocado and some tortilla strips (found in the salad section at most grocery stores, near the croutons). The avocado really made it, so don’t skip it! My kids all ate theirs topped with sour cream and shredded cheese, and I was able to sneak a little avocado in there as well!

Chicken Tortilla Soup 

*Inspired from numerous recipes on Pinterest, I adapted and made my own.*

2-3 chicken breasts (mine were frozen)

2-3 tablespoons of chili powder

1 tablespoon minced garlic

2 teaspoons cumin

2 teaspoons coriander

paprika, onion  powder, salt & pepper (all to taste)

1 yellow onion diced

1 red pepper, 1 yellow pepper, 1 orange pepper: all diced

juice of 1 lime

1 large jar of petite diced tomatoes

15 ounces of chicken broth (large container)

1 can of black beans (rinsed and drained)

1 bag of frozen corn

*Add the chicken first, then spices, then veggies and lastly diced tomatoes and broth. Let cook on low for 6 hours or high for 4. Stir occasionally.*
