What’s For Dinner? Slow Cooker Chicken Pot Pie

This is a lightened up version of a classic winter comfort food. It is a super easy weeknight meal and kid-friendly!

Crockpot Chicken


2 large chicken breasts, diced

2-3 whole carrots, diced

1/2 onion, diced

1 containter of sliced white mushrooms

3-4 stalks of celery, diced and keep greens

1 bag of frozen peas

2 cans of organic chicken broth

salt, pepper and parsley

Add all ingredients to your crock pot and cook on low for 6 hours or high for 4. After it is cooked, turn down to keep warm setting (or low, if on high). Mix 1 cup of warm water with 2 tablespoons of flour, whisk (it should be smooth). Add to crockpot and mix well. Let sit for 10 more minutes to thicken. Cook biscuits (I use the Trader Joe’s brand) according to package. Serve 🙂
