What’s For Dinner? Shrimp Salad

Make this deliciously easy shrimp salad for your dinner tonight! A great choice over a bed of lettuce or just by itself.

Shrimp Salad

1 lb of cooked shrimp, diced

1 cup of corn (either frozen or off the cob)

Diced tomato (either 2 plum tomatoes or a few cherry tomatoes)

Juice of 1 lemon

2 tablespoons of olive oil

salt, pepper and parsley to taste.

Combine all ingredients and mix well, let sit for at least an hour in the fridge.
