This is a delicious summer meal and easy to make. In the summer I like to cook quick simple meals and spend less time in the kitchen and more time outside! This only takes about 10 minutes to prepare and is great to eat alone or over a bed of lettuce.
Roasted Corn & Shrimp Salad
1 lb of raw shrimp
1 cup of roasted corn (Trader Joe’s sells this in the frozen section, or you can make your own with fresh corn on the cob)
10 cherry tomatoes, sliced in half
1/4 onion diced
1 tablespoon olive oil
Juice of 1 lemon
Cook shrimp and dice. Then mix tomatoes, corn, onion, olive oil and lemon juice. Let sit for at least an hour in the fridge prior to serving.
