What’s For Dinner?? Quinoa, Apple & Goat Cheese Salad

I am a firm believer of eating at least one salad a day, but I need to mix my salad game up often so I don’t get bored. This salad was a nice break from what I normally eat and really filled me up! I diced 1/2 of an apple, some goat cheese, about 1/4 cup of cooked quinoa, some spring mix, slivered almonds and dried cranberries. For my dressing, I kept it simple! 1 teaspoon Braggs Apple Cider Vinegar, 1 teaspoon of olive oil, some salt and pepper and mix well! You can also add a little bit of honey and dijon mustard to your dressing to give it some more flavor!
