This is a great fall recipe!! It is inspired by Skinnytaste, which is my favorite recipe blog. What’s so great about this recipe is that you can cook it all day in your crockpot if you are prepared in the morning, OR you can prepare it at 4:00 p.m. like I am 😉 Modify the recipe and cook it on your stovetop, bring it to a boil and simmer for 15-20 mins and it is ready!!!
Brown meat with minced onion, olive oil and minced garlic. When it is finished, you can add all ingredients to your crockpot and cook on low for 3-4 hours. OR you can add all ingredients to a large stockpot, bring to a boil and then let simmer for 15-20 minutes.
2 lb ground chicken
1/2 tsp olive oil
1 small onion, chopped
3 garlic cloves, minced
1 tsp chili powder, to taste
2 tsp cumin
1 tsp oregano
2 (15 oz cans) white northern or navy beans rinsed and drained
15 oz can pumpkin puree (not pumpkin pie filling
I small can of mild chopped green chile
1 cup of water
salt and pepper to taste
low fat sour cream for topping (optional)
