I love eating salads, but sometimes grabbing something quick on the go is easier and necessary! This time of year my family is SO busy and I feel like it is easier (but NOT HEALTHIER) to grab dinner out somewhere or even just eat a soft pretzel during a baseball game instead of a meal…ugh!! Mason Jar salads are my rescue food for easy, portable and healthy meals. This one was easy to prepare and really delicious!
Start with the wet ingredients first and then layer up to the dry. For the bottom: make your dressing first, add 1 tablespoon of olive oil, one tablespoon of white balsamic vinegar, 1 teaspoon of apple cider vinegar and a little squirt of honey. Mix with a fork. Next add mixed berries, I used strawberries, black berries, raspberries and blueberries. Next add spinach, feta cheese, slivered almonds and sprinkle a teaspoon of chia seeds. When you are ready to eat, shake up the jar and enjoy!!
