Shrimp scampi is one of my favorite meals. My mom makes the absolute BEST scampi that I have ever eaten. I can never replicate it..although I made this lightened up version of scampi that was really delicious!! I ate it over whole wheat angel hair pasta, you can easily eat this plain or over rice if you prefer.

1-2 lbs of fresh raw jumbo shrimp
1 tbsp of olive oil
1/4 cup of chicken broth
4 cloves of garlic, minced
1 tsp salt
1/4 cup of white wine
1 tbsp of lemon juice
*Optional: lightly toss your shrimp in whole wheat flour*
In a saute pan, heat olive oil. Turn to medium heat and add minced garlic, let saute for a few minutes, next add shrimp and cook for about 2 minutes per side, then add chicken broth, white wine, salt, lemon juice. Let the sauce bubble for a few moments, and cook until shrimp is cooked (about 7-10 minutes depending on the size of shrimp) Serve immediately over pasta or rice, garnish with fresh parsley.
