In honor of Hanukkah, we are sharing one of Abbie’s favorite treats during Hanukkah, Mike’s Latkes. These look and sound delicious, I can’t wait to make them and try them for dinner. I know that my kids will LOVE this recipe! Thank you Mike for sharing.
Potatoes, peeled & sliced (amount depending on the size of your family)
1/4 cup grated onion
2 eggs, beaten
fresh garlic, minced
salt & pepper to taste.
Grind potatoes (using your food processor or blender) mix with remaining ingredients, form into medium-sized ball shape. In a frying pan, heat oil. Add Latkes, cook on each side, until golden brown.
