What’s For Dinner? Healthy Superbowl Snacks

Looking to start preparing for the Superbowl this weekend? Make healthy and delicious snacks to bring to your Superbowl party, here are a few of our favorites. My children especially love the Buffalo Cauliflower Bites!

Buffalo Chicken Lettuce Wraps

Adapted from Skinnytaste*


24 oz boneless skinless chicken breast

1 celery stalk

1/2 onion, diced

1 clove garlic

16 oz fat free low sodium chicken broth

1/2 cup hot cayenne pepper sauce (I used Frank’s)
For the wraps:

large lettuce leaves, Bibb or Iceberg

1/2 cups shredded carrots

2 large celery stalks, cut into 2 inch matchsticks

In a crock pot, combine chicken, onions, celery stalk, garlic and broth (enough to cover your chicken, use water if the can of broth isn’t enough). Cover and cook on high 4 hours. Remove chicken, save 1/2 cup of the broth and discard the rest. Shred the chicken using 2 forks and put in back in the crock pot, add the broth and hot sauce. Stir well and let cook for another 20-30 minutes. Serve on lettuce wraps.

Buffalo Cauliflower Bites

1 cup water

1 cup all purpose flour

2 tsp garlic powder

6 1/2 cups cauliflower florets

3/4 cup Franks Hot Sauce

1 tbsp melted unsalted butter


Preheat the oven to 450°F. Lightly spray a large non-stick baking sheet with oil.

Combine the water, flour, and garlic powder in a bowl and stir until well combined.

Coat the cauliflower pieces with the flour mixture and place on the baking sheet; bake for 20 minutes.

While the cauliflower is baking, combine the hot sauce and butter in a small bowl.

Pour the hot sauce mixture over the baked cauliflower and continue baking for an additional 5 minutes. Serve.

Skinnytaste Cowboy Caviar 

1 can black beans, rinsed and drained

9 oz cooked corn, fresh or frozen (thawed if frozen, I use the Roasted Corn from Trader Joe’s)

1 medium tomato, chopped

1/3 cup red onion, chopped

1 scallion, chopped

1 1/2 – 2 limes, juice of

1 tbsp olive oil

2 tbsp fresh minced cilantro (or more to taste)

salt and fresh pepper

1 medium hass avocado, diced
In a large bowl, combine beans, corn, tomato, onion, scallion, cilantro, salt and pepper. Squeeze fresh lime juice to taste and stir in olive oil. Marinate in the refrigerator 30 minutes. Add avocado just before serving.

For Dessert:

Make chocolate covered football strawberries, use a good dark chocolate when making them! Melt the chocolate, dip the strawberries and let them harden, lay them flat on a platter. When they have hardened, melt some white chocolate and draw your football laces on the strawberry. Fun, kid-friendly and a much better choice than cupcakes!!
