What’s For Dinner?? Grilled Shrimp Spring Salad

During the Spring, my children’s schedules seem to be packed, between sports, school and other activities, we typically have something every night of the week. I need quick and easy dinners that are still healthy, in hopes of avoiding the funnel fries from the snack shack! Luckily my children like salad, so paired with soup or a grilled cheese sandwich for them, this meal works for my whole family.

Grilled Shrimp Salad:

For the salad: 

Spring Mix

Shredded purple cabbage

Diced scallions


Cherry tomatoes

Gorgonzola or Blue Cheese crumbles

Diced red peppers

For the shrimp: 

1/2-1lb of raw shrimp (peeled)

a little olive oil

Old Bay Seasoning (to your liking)

Saute shrimp in olive oil and old bay until cooked through (about 3-5 minutes per side)

Place hot shrimp on salad and enjoy. Top with dressing of your choice, I used Tessamae’s Southwest Ranch, you can also use a homemade balsamic dressing.
