Looking for a Cinco De Mayo inspired dish to make this week? Try this tonight!! This is a delicious alternative to traditional fajitas, my family loved these! They go great with a yummy margarita! You can serve them on a fajita, taco shell or over a salad.
For the shrimp:
1-2 lbs of raw jumbo shrimp, peeled
2 teaspoons of cumin
juice of 1 lime
Squeeze lime juice over the shrimp and season with cumin. Let sit in the fridge for at least an hour.
1 fresh mango, diced
1/4 red onion, diced
a handful of fresh cilantro, chopped
1/2 red pepper, diced
juice of 1/2 lime
Mix all of the ingredients and sit in the fridge for at least one hour prior to serving. Overnight is even better!
To prepare fajitas:
Grill the shrimp (about 3 minutes per side or until pink and cooked through). I use my grill pan for the stovetop.
Top with salsa and shredded lettuce and enjoy! I also added a little Salsa Verde to mine that I bought at Trader Joe’s.
