What’s For Dinner? Grilled Salmon with Avocado Salsa

A few months ago I did the Whole 30 and loved it! It was a challenge the first week for sure, but it really helped me change my eating lifestyle. This was one of my go to recipes and it is a perfect summer meal. You can grill the salmon on a grill pan or outside on your outdoor grill.

*recipe adapted from The Cookie Rookie

  •    2 lbs salmon, cut into 4 pieces
  •    1 tbs olive oil (I used light extra virgin olive oil)
  •    1 tsp salt
  •    1 tsp ground cumin
  •    1 tsp paprika powder
  •    1 tsp onion powder
  •    ½ tsp ancho chili powder
  •    1 tsp black pepper

Avocado salsa:

  •    1 avocado, sliced
  •    ½ small red onion, sliced
  •    Juice from 2 limes
  •    1-2 tbs finely chopped cilantro
  •    Salt to taste

Mix the salt, chili powder, cumin, paprika, onion and black pepper together, rub the salmon fillets with olive oil and this seasoning mix

Combine the avocado, onion, cilantro, lime juice, and salt in a bowl and mix well, chill until ready to use.

Grill the salmon as desired

Top with avocado salsa and enjoy!
