When I eat a salad for dinner I like to make sure that it is is going to fill me up and not leave me hungry an hour later! This is a perfect dinner salad, it is filling and really flavorful. I like to grill enough salmon for my family to eat as well, I serve a simple side dish for my kids and put mine over this salad. Let us know if you make this for dinner tonight!
Grilled Salmon Salad
1-2 lb of fresh wild caught salmon (adjust according to your family size)
1-2 tsp. olive oil
1 tsp. sea salt
1 tsp. ground cumin
1 tsp. paprika
1 tsp. onion powder
1 tsp. ground pepper
*Mix all dry ingredients together and set aside. Lightly coat salmon with olive oil, next rub spices on salmon. Grill salmon, either on stove top or outside on your grill.
As salmon is grilling, prepare your salad. I use 2-3 cups of fresh spinach, 1 large tomato cut into slices, 1/4 of a red onion sliced, 1/2 cucumber sliced and some fresh broccoli florets. Once salmon is finished, add desired amount to salad and top with a healthy dressing of your choice.
