What’s For Dinner?? Grilled Salmon Salad

During the Spring and Summer I tend to eat lighter meals. As the weather gets warmer and the evenings get busier, I like to have quick and simple meals that are healthy.  If you have a grill pan that you can use on your stove top, use that. Otherwise, this salmon turns out well when grilled outside to get a little crispy on the edges 🙂




For the salmon: 

Marinate salmon with 1-2 teaspoons of bbq sauce of your choice (I used Trader Joe’s Apple Bourbon BBQ Sauce)  and then sprinkle 1 teaspoon of Old Bay Seasoning. Set aside and let sit for at least 20-30 minutes.

Once marinated, grill salmon until cooked. I removed the bottom skin prior to cooking and grilled using an indoor grill pan, the bottom got a little crispy and it was excellent!!

For the salad: 

I used a combo of spring mix and spinach, I then added diced scallions, diced cucumbers and the salmon. I topped with Tessamae’s Southwestern Ranch Dressing, which adds a little kick, but pairs well with the salmon.
