What’s For Dinner? Grilled Peach & Salmon Salad

On days this hot I never want to put on my oven to cook & find that I always want to eat something light. This salad is perfect for tonight!! Easy, filling & healthy.

1 peach, sliced

Salmon (grilled or baked)

Lettuce of your choice

Gorgonzola cheese (about 1 tablespoon)

Red onion, sliced


2 tablespoons of olive oil

2 tablespoons of balsamic

Salt & Pepper

Grill or bake salmon, set aside. On a grill pan or frying pan, put 1 teaspoon of butter, sliced peach and a dash of cinnamon, cook for about 3-5 mins.  Place salmon, peaches, cheese & onion over lettuce. Whisk dressing well and serve over the salad.
