What’s For Dinner? Grilled Chicken & Cowboy Caviar Salad

During the Spring I love eating salads for dinner, I feel that they are light, yet filling and are great when you are busy during the week. This salad is packed with protein and you don’t even need dressing with it! It has a great flavor. I made a homemade Cowboy Caviar dip for a party and set aside some to eat the next day, it was so good on a salad and much healthier than eating it with tortilla chips 😉  Enjoy!

Directions: 

Cowboy Caviar:

1/4 bag of Roasted Corn (frozen, from Trader Joe’s)

1 can of black beans, drained and rinsed

10-12 diced cherry tomatoes

1 avocado, diced

1/4 red onion, diced

2 tablespoons (or more) fresh cilantro, chopped

Juice of 1 large lime

Salt & pepper to taste

1 teaspoon of cumin

1 teaspoon of garlic powder

1/2 teaspoon of chili powder.

Combine all ingredients, mix well and set in the fridge for a few hours (or overnight).

Salad: 

Lettuce of choice

1/4 breast of cooked grilled chicken breast, sliced thin

2 tablespoons or so of the cowboy caviar.

Arrange your salad & enjoy!!
