What’s For Dinner? Grilled BBQ Chicken & Corn on the Cob Salad

I love eating salads, although I tend to get bored of salads and try to mix it up often as I typically eat a salad at least once a day for lunch, dinner or both.  This a great recipe to have for the summer and one that you can easily create at holiday BBQs this weekend. Don’t have grilled chicken as an option? Substitute the chicken for a burger, you won’t miss the bun!

Salad: 

Lettuce of your choice

1 small tomato diced

diced white onion

1 hard-boiled egg sliced

1/2 an ear of corn on the cob cooked and cut off the cob (I added a little sea salt, no butter)

Grilled BBQ chicken, sliced (I used about 1/3 of a breast)

Dressing: Tessamae’s Southwestern Ranch
