Now that school and Fall activities are in full swing, I tend to use my crockpot at least 3 nights a week. My kids love fajitas and tacos, so these Crockpot Chicken Fajitas are the perfect weeknight meal for our busy weeknight schedule. I make this often and have tried a few different recipes, I prefer to make my own fajita seasoning (recipe below) although if you don’t have the time or ingredients for that, you can easily add a packet of fajita or taco seasoning instead.
Slice 3-4 peppers (I like to use a variety of red, yellow and green)
Slice 1/2 sweet yellow onion
Place on the bottom of your crockpot with a little bit of olive oil.
Next add 3 large chicken breasts (I typically add them frozen and cook on low all day)
Add fajita seasoning (either homemade or packet)
Add 1 cup of water
Cook on low (typically about 6 hours if frozen)
Then, using two forks, shred the chicken. and mix well. Let sit on warm setting for about 20 minutes and serve! I like this over a salad, my kids like to eat them on fajita wraps with lettuce, sour cream, salsa & cheese.

¼ cup Chili Powder
2 teaspoons Sea Salt
2 tablespoons Paprika
tablespoon Onion Powder
1 tablespoon Garlic Powder
1 teaspoon Cayenne Powder (optional)
1 tablespoon Cumin Powder
