What’s For Dinner? Crock Pot Chicken Cacciatore over Spaghetti Squash

The weather has been very cold this week, so I have been craving warm meals. This was a big hit at my house last night and is a great clean eating recipe if you are following our clean eating challenge! I love my crockpot, I put everything together in the morning and I don’t have to worry about it until dinnertime, so easy for weeknight meals. I ate this over spaghetti squash, my kids ate it with regular pasta and all loved it.

Chicken Cacciatore 

2 lbs of chicken tenders or 3 chicken breasts

1 large red pepper, sliced

1 large green pepper, sliced

1 large yellow pepper, sliced

1 package of fresh mushrooms

2 teaspoons of minced garlic

1 teaspoon of dried oregano

1 teaspoon of dried basil

1 large can (28 oz) of crushed tomatoes

1 small can of diced tomatoes

salt & pepper to taste

Place chicken at the bottom of crock pot, add peppers, mushrooms, spiced and crushed & diced tomatoes. Cook on low for 7-8 hours.

Serve over Spaghetti Squash (or regular pasta of choice)
