What’s For Dinner? Crab Cake Salad

Spring is here!!! This weather has been beautiful and I have been inspired to start cooking some summer meals! This is an easy go to in my house, I am lucky because all of my children love seafood!! It is very easy to prepare and yummy!!

Simple Crab Cakes

Lump crab meat (1 lb)

1 tablespoon of mayo (spectrum brand or just mayo)

1 large egg

1/3 cup of panko crumbs

old bay to taste

salt & pepper to taste

fresh parsley

*mix all ingredients and make into crab cakes.*

Heat 1 tablespoon of olive oil in pan, cook crab cakes for about 4 mins per side (or until golden brown) Serve over mixed greens. I topped mine with a homemade simple Baltimore sauce, 1 teaspoon of mayo and some old bay seasoning, a little squeeze of fresh lemon, mix well!
