What’s For Dinner? Chicken Burger with Spicy Broccoli Slaw

This recipe is one of my favorite meals to make when the weather gets warmer, reminding me that summer is right around the corner! These burgers are a lightened up version of one of my favorite chicken burger recipes. I ate mine on a lettuce wrap and it was the perfect combination! My kids love to eat these burgers with a little cheddar cheese and BBQ sauce, so this is an easy meal that can be made kid friendly as well.

Ingredients:

Broccoli Slaw:

This slaw tastes better if it sits for a little in the fridge (I usually make it two hours prior to serving).

Organic Broccoli Slaw (found at Trader Joe’s)

1-2 tablespoons of Mayo (I use Just Mayo, it is vegan and non-gmo)

1-2 tablespoons of Frank’s Hot Sauce

3 scallions diced (just the greens)

Mix all ingredients together and place in fridge.

Chicken Burgers:

1 lb of ground chicken

2 tablespoons of BBQ sauce (I like Annie’s Organic Sweet & Spicy BBQ or Stubb’s All Natural Sticky & Sweet BBQ)

2 scallions diced (just the greens)

salt & pepper

Mix all ingredients and form into burgers. In a skillet or grill pan, heat olive oil (about 2 tablespoons) reduce heat to medium and cook burgers (about 8 minutes per side, or until cooked through).

Serve burger on a lettuce wrap topped with spicy broccoli slaw.
