What’s For Dinner?? Chicken & Biscuits

So this is probably not the healthiest recipe, although I made a lightened up version of chicken and biscuits. It turned out to be very good and my kids loved it. A good meal for a cold & rainy night!! Enjoy 🙂 Jenn




Chicken breasts, thinly sliced (based on the size of your family)

Onion (1/2 diced)

Olive oil (2 tablespoons)

3 teaspoons of flour

16oz of chicken broth

1 bag of frozen mixed veggies

Buttermilk Biscuits (I purchased mine from Trader Joes)


In a large saute pan, heat olive oil, add onions and saute for a few mins with salt and pepper to taste. Next add chicken broth, reduce heat and add 3 tablesoons of flour. Stir well until your sauce is thicker, you made need to add more flour/chicken broth depending on consistency. Next add frozen veggies and stir well. Place your chicken breasts in a pan and cover with sauce and veggie mixture. Cover and cook in the oven at 350 for 30 mins. Remove from oven and add biscuits, cook for 8-10 minutes, then flip biscuits and cook until they are golden brown.

Serve immediately 🙂
