What’s For Dinner? Butternut Squash Chicken Soup

I love Fall & the change of weather for many reasons, one of those reasons is eating soup. Soup is one of my favorite meals to eat, but like most people, I typically only cook soup when the weather is chilly. This is an easy crockpot soup that only requires about 5 minutes in the morning. It cooks all day and is really delicious & healthy. I like to serve my kids soup with some grilled cheese sandwiches for an easy weeknight dinner.

Butternut Squash Chicken Soup

32 oz chicken broth

2 large chicken breasts

1 can of white kidney beans

1 frozen bag of spinach

1 frozen bag of mixed veggies

2 frozen bags of organic butternut squash OR fresh butternut squash, cut in cubes

salt & pepper to taste

1 cup of orzo or jasmine rice

Add all ingredients, EXCEPT ORZO OR RICE to your crockpot in the morning, cook on low all day. About 20 minutes prior to serving, add orzo or rice, once cooked your soup is ready!
