What’s For Dinner? Breakfast! Sweet Potatoes, Spinach and Poached Eggs

My kids LOVE breakfast for dinner nights….pancakes, waffles, some scrambled eggs with cheese, and they are happy. Although when it comes to my breakfast for dinner choices, I need something healthier. This is a great breakfast for dinner night healthy option for parents ๐Ÿ™‚

Start with your sweet potatoes, dice one sweet potato and season with salt and pepper and a little olive oil. Saute and set aside when cooked. Next, prepare fresh spinach and diced onion, sauteed in a little olive oil & salt and pepper. While cooking, begin poaching an egg. When cooked, place sweet potatoes first, then spinach then egg. Easy & healthy!! Enjoy ๐Ÿ™‚
