What’s For Dinner? Blackened Grilled Fish Tacos with Mango & Peach Salsa

Pair this meal with a margarita and some chips and guac for a great summer night treat! My kids LOVE eating fajitas and tacos, although I like to find healthier alternatives to mix it up, this was a big hit. You can use any fish that you like or shrimp. For this meal I used tilapia and it turned out really well! Make sure to make the salsa at least 30 minutes prior to serving, even better if it sits for a few hours or overnight!

Mango Peach Salsa

1 fresh mango, diced

1 large peach diced

1/2 red pepper, diced

1/4 red onion, diced

1 lime, juiced

1 tablespoon of olive oil

some fresh cilantro diced


Mix all ingredients together, let sit.

Fish Tacos 

1 lb of tilapia, place in a freezer ziploc bag

Mix together the following ingredients:

1½ Tablespoon paprika

1 Tablespoon garlic powder

1 Tablespoon onion powder

1 Tablespoon dried thyme

1 teaspoon black pepper

1 teaspoon cayenne

1 teaspoon basil

1 teaspoon oregano

1 tablespoon of olive oil

After mixed: add the blackening seasoning olive oil mixture to the bag with fish and let it sit and marinate for 30 minutes. Grill fish until cooked through and a little crispy on the outside.

Serve on whatever you prefer, a salad, a fajita, or a taco shell, top with homemade salsa, diced tomatoes, fresh sliced avocado and lettuce. Top with a cilantro avocado yogurt dressing for added flavor!
