What’s For Dinner? Black Bean Veggie Burger with Peach Salsa & Black Bean & Corn Salad

I am sure after this weekend there were a lot of burgers and hot dogs eaten, although this is NOT your traditional burger meal! You can easily find recipes to make your own black bean burgers, although I used the MorningStar Spicy Black Bean burgers when I made this meal. I placed the grilled burger on top of arugula, topped with a homemade peach salsa and had a side of black bean & corn salad.

Peach Salsa & Black Bean Salad

Corn and Black Bean Salad:

1 can of black beans, rinsed well

1/2 bag of frozen corn (cooked) or corn cut off the of cob (cooked)

1/4 cup red onion (diced)

1/2 avocado (diced)

1 medium tomato, diced

1 tablespoon olive oil

2 tablespoons fresh cilantro, minced

juice of 1 lime

salt and pepper (to taste)

cumin (to taste)

garlic salt (to taste)

*Mix all ingredients together and let sit in the fridge for at least 20-30 minutes prior to serving.

Peach Salsa

*recipe from Running in a Skirt

1/4 cup cilantro

Juice of 1 lime

2-3 ripe peaches, diced

1/2 purple onion, diced

1 small tomato, diced

salt & pepper to taste

Mix all ingredients and let sit for about 15-20 minutes prior to serving.
