What’s For Dinner? Orange & Blue Cheese Spring Salad with Homemade Dressing

Looking for the perfect Spring salad? Make this! It is easy to prepare and so good. During this time of year I am so busy and always make sure that I have quick healthy meal options, so that I don’t get stuck snacking all day!

This salad was inspired by Skinnytaste, my favorite food blog and this is one of my favorite dinners.




Spring Salad


2 cups of fresh spring mix

1 orange

1 tablespoon of crumbled blue cheese (or feta if you prefer)

a few pieces of sliced onion

Peel orange and slice each piece in half.  Prepare salad and top with sliced oranges, blue cheese and onion.

Homemade Dressing:

1-2 tablespoons of olive oil

1-2 tablespoons of white balsamic vinegar

1 teaspoon of organic honey

Whisk the ingredients together and add to salad. Mix well and enjoy!
