It is hard to believe that this upcoming weekend is Memorial Day, the unofficial start of summer!! The weather looks like it is going to warm up and hopefully we will get a nice warm long weekend. Typically, during summer BBQ’s my kids will go after the treat table, patriotic cupcakes. cookies and candies are always a hit, although not always the best choices. Sugar rush kicks in and the kids go from hyper playing to crashing meltdowns. I am not one that forbids any food group, although I try to teach my children balance between healthy and the occasional treat food. I have made these Watermelon Popsicles for numerous summer BBQ’s, birthday parties or just a poolside treat and they are always a popular choice for both kids and adults. I originally saw the recipe on Skinnytaste and knew that it would appeal to my kids. I don’t know what it is about putting food on a stick, but it always makes it seem more fun!
This is so easy to prepare. All you need is a large watermelon, cut into triangle shapes (keep the rind on and do not cut too thin). Then make a small slit in the middle of the rind on each triangle, stick large popsicle sticks inside the rind and serve 🙂
